This product is interesting. It is not a miracle product. It cannot do everything egg white or gelatin does. I tried to make gelatin free marshmellows with it, and it did not remain stable. This stuff also imparts a strange off flavor to foods if used in sufficient quantities. The only good the product can do is help stabilize egg foam. It does prevent egg foam from weeping and helps it remain fluffy longer so if you are looking for a way to make a better meriange than this product is a good choice but for everything else I find it falls short.

I was looking for a way to make vegan marshmallow fluff and was most definitely having a problem in doing so. After talking to a few friends (one of which actually published a book http://www.amazon.com/The-Vegan-Girls-Guide-Life/dp/1616080922/ref=sr_1_1?ie=UTF8&qid=1336984170&sr=8-1 ) she recommended this stuff. I found a recipe that also mentioned this versawhip as well, so I figured I might as well get it. Leery at first because of the price, I'm glad I got it. It made my fluff the EXACT way I wanted it and tastes delicious! I left it in the mixer a little longer than the recipe said, and I'm so glad I did. It turned the perfect color and consistency.

Again, glad I bought this product! I'll have it FOREVER since the recipe only called for 1 tsp and 1 tbsp. I only wish it came in different sizes than just the 16oz one
