 Makes the best ever pumpkin pie crustDec 16, 2009

This Thanksgiving I used these cookies instead of our regular brand when making my grandmother's famous cookie crust for pumpkin chiffon pie, and it was so delicious that everyone at the table was left speechless. For one crust, use one and a half cups of cookie crumbs, a combination of ginger cookies and vanilla wafers. Add in some finely chopped pecans, a quarter cup of confectioner;s sugar, and a third cup of soft butter. Spread in a buttered pie pan and bake for 10 minutes at 350°. Cool before filling -- we use a pumpkin chiffon filling, which is basically a pumpkin custard made with evaporated milk, brown sugar, and egg yolks, then enriched with butter, firmed with gelatin, and lightened with whipped egg whites. Top with whipped cream.

So happy I can get these on Amazon as sometimes they are hard to find in my neighborhood. Even though they are not "all butter" I love them even more than Walker's stem ginger shortbread which is also delicious. They have a chewy texture and are studded with luscious chewy bits of ginger - they are great with tea or coffee. I usually don't like "bought" cookies but these are an exception.

We've always really liked these biscuits. When fresh, and the ones we got from Amazon were, they are outstanding, and at this price they're a good deal too.

A taste of the Old Country in time for a Christmas supriseJan 08, 2011

I suprised my husband this year with 7 different flavors of Scottish shortbreads for Christmas. They came beautifully wrapped and well packed with a minimum of surplus packing materials and with the exception of a couple of broken thins, made the trip well. They taste fresh, just like they came out of the oven and are a nice snack with a cup of tea or coffee at night with a good book or watching tv. It was a very worthwhile purchase and I would do it again in a heartbeat just to see the look on my husband's face when he opened the boxes and then when he sits down to enjoy his "presents". I also thank Amazon for the speed in handling the order and getting it here in time for Christmas as I had just had a total knee replacement and was immobile for a while. They are good people!

I had these on an airplane and had to have more. They are so good but it is hard to describe how good a cookie is. I dunk it in hot tea. YUM!!Expensive but so worth it.
