I'm an avid cook and enjoy trying commercial and homemade spice mixes. I admit that I was skeptical of this brand at first - with a name like 'Urban Accents' it sounds like they should be selling imitation teak furniture at Cost Plus World Market - but I'm glad I gambled. This is a very good spice 'glaze', particularly for those of us who are closet chileheads!

Using a liberal amount of olive oil helps to 'activate' the mix's sugar component. 30-60 minutes in the fridge and it softens and liquifies into a nice light glaze speckled with red chile flakes. The result after roasting is a piquant, citrusy, sweet-sour-hot flavor.

The predominant notes in the glaze are a noticable hot chile burn, followed by a citus/lime tart taste. While not nearly as hot as a dash of tabasco or habanero sauce, this is not the ideal glaze for those who consider ketchup and communion wafers 'spicy'.

This spice works best on pork, some beef cuts, and tuna/salmon. It is slightly limited in its range, however. Be careful with using this on very delicate white-fleshed filets such as halibut and sole - the chile in this might overwhelm it.

Unlike the Honey-Chipotle glaze from this brand, using this mix in the oven will NOT result in a glaze that can 'carbonize' along the side where the food meets the pan. Much neater cleanup.
