I am one of those people who has an intense love for meat snacks. I can't resist trying different pickled sausages, jerkys, and meat sticks. When I came across this particular item, I was intrigued. I couldn't imagine what flavor the addition of red and green bell peppers would impart to a class of meat snacks that I have been in love with since I was a child. I didn't want to buy a whole box and then find I hated them, and I talked myself out of buying them many times, but something always made me return to just window shop, so to speak. Finally, Amazon had a sale, and I could resist no longer. Oooooo, I wanted to kick myself for waiting as long as I did to buy these. I have tried so many---Penrose, Firecracker, Tijuana Mama, Jack Link's Hothead and Screaming Demon (my second favorite), TNT, Hannah's--and this was my instant favorite. Now, THESE ARE NOT FOR EVERYONE, and for some reason the green peppers tend to give me more indigestion than hot peppers, but OMG I am so addicted....they are not as vinegary as some sausages, are moderately spicy, and the texture ranges from medium-soft to firm, depending on how long they have "aged," I think. But the peppers give it a slightly sweet taste that is unlike anything I have ever tasted---and it has a spicy, mustardy kick. The meat also seems to be a little coarser ground than most pickled sausages I've tasted. I actually panicked when they were out of stock recently, prompting a frantic email to the Trail's Best website, where I was informed that I could only buy that variety in the 6 carton case for $142.50. I was seriously about to buy them, too---but Amazon came to my rescue and restocked. I don't want to run out EVER again. Deep down, I know that I probably resemble Gollum, stroking my box of "preciouses" while jealously guarding the level of Amazon's stock for my next purchase, but I simply cannot bring myself to care anymore. Yeah, they're that good.

By W. Crook I give this a four star, because that is what it is to me. I guarantee not every one will like these! They have a very soft texture, and the peppers are mixed in the meat. They are also moderately spicy. However if that is what you are looking for, they are great.
