This is one of the better pancake mixes. I mix a half cup of this mix with a half cup of Pamela's pancake mix, one ripe banana, cinnamon, 1/4 cup of almond meal, plus eggs, oil and milk as called for and the pancakes are amazing. I serve them to non-celiac family during visits and they love them.

This was one of my first purchases of a "bread-type" product after being diagnosed with celiac sprue disease this past November....so, you can imagine my delight when the waffles I made with this mix turned out, not only be edible, but were actually fabulous!! I ordered the 6-pack & can't imagine not having it on hand! My kids even try to talk me out of these...I have to hide them behind other items when I freeze them. They are great for making ahead and packaging in individual serving-sized zippered bags to be toasted later!

This brand (apparently owned by the same company that makes the 'Glutino' brand), is absolutely the best that I've tried. There is no strange aftertaste like some other brands.
Here's my suggestion that makes these pancakes even better:
When you are mixing, add in about a teaspoon of 'Pumpkin Pie Spice', and another teaspoon or so of vanilla. YUUUMMMMM!!
My daughter is sensitive to wheat and this is her favorite food! Even if/when she grows out of this sensitivity, I'll continue to make these panckaes - They're DELICIOUS!!!

We use this mix to make Irish Soda Bread (recipe is on the back), and it is very, very close to the gluten-containing recipe I used to make. Tastes great sliced with a slab of butter.
