This is my favorite go to dinner when I want something really tasty, but really easy and fast. My favorite way to make it is to bring it to a simmer and add chicken breast, so that it cooks in the soup. Sometimes we add a small can of corn, and sometimes, some fresh basil shredded on top at the end. It's absolutely delicious!!!!!! Enjoy!!

This is fresh tasting and has all the ingredients you'd want....the lemongrass and galangal are GREAT in the can...they only add to the flavor and are easy to pick out, and there's not too much that it's annoying or too filling in the broth content.
I can't agree with another reviewers input on it being too spicy....unless you're just not used to Thai or Asian chiles in cooking, or are not used to hot spices. I actually added fresh hot chiles because I like it hot!
As it is, this is a great base! I added some chicken breast and a bit of chicken stock, fresh mushrooms, fresh cilantro, some fresh chopped red serranos, squirt of lime juice and some bean sprouts and you've got a meal! If you're camping or in a rush, the soup alone from the can is wonderful as well.
Let me repeat that....what comes in the can is perfectly WONDERFUL and you don't need to add anything if you don't want too.

By icentropy This soup is really wonderful. I used to buy it at a supermarket 10 years ago, then I moved and couldn't locate it again (at any local stores). I finally brokedown and ordered a case online. Tastes as good as I remembered.

Thai Kitchen describes this soup as "a delicious blend of coconut milk and the traditional Thai flavors of ginger and lemongrass". It is a very good blend, and I really enjoy the spice and flavor. The soup does have an initial bite because of the spice, but if you are a spicy food fan, it is not overwhelming at all.
We use the soup either straight out of the can or as a base for a larger, more ingredient-filled soup. Either way, this is a yummy soup that I will buy over & over again.
NOTE: Picture on can is misleading. The soup is more "brothy" than chunky. In fact, not many "chunks" at all.

By vgroves I love taking this soup and adding frozen vegetables and meat to, let it simmer awhile. Delicious large meal for 2.
