As Giordano Bruno will tell you, Rustichella is the best dried pasta with a wide US distribution. And many are available with Amazon Prime.
I single out pappardelle because, as the title says, this means gobble 'em up in Italian. These are not standard pasta. They are northern egg noodles. Broad and flat they know not tomato sauce. We have these with game. Wild Boar, hare or trout. Truffles. Butter. Shallots. Anchovy. Cracked pepper. Rosemary bruised and par boiled. Fall and winter.
Cook gently, salt. No volcano of roiling water. Watch the pot. They cook quickly. Drain, but a kiss of their water stays with them. Note, these need careful packing and come in boxes half the normal weight. They are not cheap. But they are sublime.

I have had 3 other types of Rustichella pasta and I loved all of them. I will never buy these egg noodles again and I may throw away the packages I have left.
