Outstanding pasta and interesting shapeNov 04, 2009
By Resips Chitarra is a great shape that is like spaghetti with edges and I really like the way it holds sauces. In the old days, chitarra was cut with guitar strings. Rustichella makes outstanding quality pasta. It's made from stone-ground durum wheat flour and spring water, period. The pasta is extruded from bronze dies and is air dried. The pasta cooks up al dente with great texture and flavor. Sauces cling to the pasta because of the texture the dies impart to the pasta during forming.
Our family has been eating Rustichella pastas for years and it always is my first choice when I'm making any kind of pasta dish. That goes for red sauces, white sauces, fish sauces, you name it. If for some reason, I have to use another brand, I hear about it. I guess we are all spoiled by our favorite, Rustichella.

First, Rustichella is the crème de la crème of artisanal pasta, the Amazon four-packs are the most economical way to buy it, and this odd, square shaped pasta gives a firmer tooth than linguine. It is traditionally make by putting pasta dough over closely spaced steel wires (called a chitarra or guitar), then pressing it through with a pasta rolling pin. If you like something a little more substantial than spaghetti, try Pasta Chitarra.
