 Great taste, at first difficult to use in a pasta machineJan 11, 2009

The instructions on the OrgraN Pasta flour box are fine for an experienced pasta maker, but I fear for people who are looking for a gluten-free pasta who have never made pasta with semolina and are moving to gluten-free.
Try this: put three whole eggs in a one cup measure, add one TBS Olive oil. Add water (if any) to the seven ounce mark, mix well. Make a well, add liquid and mix.
Now the trick -- remember there is no gluten to develop -- so kneeding the dough into an elastic ball no longer applies.
The pasta dough rolls so easily right after mixing that one wants to think it won't work. We went from dough to our pasta machine[[ASIN:B000PXWO9W Pasta Machine Set by Atlas Marcato] and could not contain our need to move from setting one (three times!) to five progressively. Wrong! Roll it out on setting one or two. Go to setting four and cut. Or roll out and cut by hand. Boil ONLY 1 MINUTE AND TEST FOR TEXTURE. LESS THAN 2 MINUTES COOKING IS REQUIRED. DO NOT RINSE!
For lasagna use pasta in cassarole unboiled.
Much rethinking of making pasta is required to use gluten-free flour. But the results are worth it. OrgraN has fabulous flavor, is faster to make than pasta from semolina and you might consider making dim sum wrappers from this flour. After steaming, the wrappers glisten -- almost if they were made from wheat starch -- which can be hard to find outside New York City.

Yes, you can make homemade gluten free raviolis with this flour. Truthfully I haven't used it to make any other pasta (since there are many brands of readily available gluten free pasta). Making gluten free raviolis is a little time consuming. But sometimes you have to make your child raviolis.

I grew up in an italian family. Homemade pasta is very important to us and this flour creates great teature,tasting pasta.
