I use Xylitol for baking and in my coffee. It works great in baked goods and it also works well for hot beverages. You need to dissolve it before putting into cold beverages or it will not dissolve. Saves you from the blood sugar rise of sugar!

By Walter A. Byrd I can taste the difference between Xylitol and sugar in my coffee. Xylitol is also less sweet than sugar, so it takes more to get the same level of sweetness, which somewhat nullifies the difference in calories.

By bodhibearNE.PA Many sugar substitutes claim to have "no unpleasant aftertaste". Some folk even write reviews substantiating claims made by other sweeteners or combinations of sweeteners, products that I find fairly intolerable. Go figure. To each his own tastebuds. Perhaps mine are just more sensitive to the lingering ickyness of Splenda or Stevia.
But xylitol tastes just fine. I use it in my coffee, on my oatmeal, and when mixing up my own fruit yogurt with unsweetened fruit and 0% fat Greek yogurt. I have not tried baking with it yet, so I'm not sure if larger amounts will yield the GI upset I associate with getting a bit carried away with alcohol sugar based candies. It's also rather expensive (my one reservation) so I'm more apt to want to use it by the teaspoon than by the cup.
Update: Switching to Erythritol. I've been controlling my Type2 diabetic blood sugar with exercise, oral medication and only whole grain, high fiber, low glycemic carbs. Xylitol in my coffee and on my oatmeal. More beans than before as well. Just can't afford the high protein very low carb approach. Doctor satisfied with my blood tests, but I've been paying the price in the gas department. Really far too much of it. No cramps but far worse than any previous simple bean related distress.
It's been said that the gas associated with both xylitol and with +++ soluble fiber decreases over time as your body gets used to them but I kept waiting for an improvement until this week when I substituted erythritol for the xylitol at breakfast. Major improvement, a reduction on the order of something like 80-90%. Still a bit of gas, but then that could just be all the soluble fiber.
So goodbye xylitol. The erythritol is indeed a bit less sweet and a bit more expensive but worth it in my opinion. May have to just learn to take my coffee a bit less sweet in the interest of economy. Doubt if I'll be getting into baking with it.

By Ray This xylitol tastes just like sugar. Beware that xylitol may act as a laxative. Also, it is poisonous to dogs. These warnings are clear on the packaging. It's great stuff as far as I'm concerned, but do exercise moderation.
