Fantastic healthy natural alternative to typical store-bought pudding mixesNov 12, 2007

My family and I discovered this years ago via a natural foods buying club when it was first introduced. Once the kids were grown, we got away from buying it. However, I decided recently to see if it was still available, and was thrilled to find Mori-Nu still made it.
If you're not familiar with tofu or got turned off by it previously, try a packet of this with a package of tofu. Unless you're a "super sweet foods" sort of person, I'm sure you'll enjoy it.
BTW, Mori-Nu's own product works the best because it comes out the smoothest with the least blending. However, other brands will work. You just have to blend it longer. You may also want to experiment with the amount of liquid you use per batch. The recommended amount seems to work fine with Mori-Nu tofu, but you'll probably find you need to add more liquid with other tofu. Oh, and if you *really* want to make this pudding lemony, substitute some fresh-squeezed lemon juice for all or part of the liquid.

For all of you who remain skeptical about tofu, this easy, quick and tasty desert could be a real mind changer. The texture of the pudding is smooth and creamy, and the lemon flavor is sweet and slightly tangy. Takes only about five minutes to fix, assuming you have a blender. Great quick desert, high in protein and low in fat.

Just received my Amazon order for a case of Lite Tofu and a case of Mori nu Mates in Lemon Creme. I opened the box expecting to make a pie today but was surprised to find just 1 pkg of Lemon Creme pudding mix along with my case of tofu. This was the first time I had a problem with an Amazon order like that. I looked up how to contact customer service and entered my phone number to have them call me. My phone was ringing before I had a chance to move. The Rep was very nice and put in an order to replace my pudding mix with next day delivery. Don't you just love Amazon! Anyway...with my one pudding pkg, I immediately mixed it up using fresh lemon juice for the called for water. It is wonderful! I definitely will be trying the other flavors. I didn't think the pkg smelled like what I expected when I opened it to pour into blender but the taste is excellent. What an easy dessert.
I make a darn good chocolate pudding using soy milk but I think I'm about to change recipes. ( 1 box tofu, 4 T Water 1 pkg chocolate Mori nu Mates)

I have become very lactose intolerant so am avoiding foods I used to enjoy like ice cream and pudding. Now that I have found Morinu Mates Pudding mixes
I can enjoy a pudding treat once in awhile. Tofu gives the pudding a different taste from regular pudding. It's not bad. It just isn't like regular lemon pudding.
Just read another review where someone wrote that they add
a Tbsp. of lemon juice to the mix. I will try that next time.
