By S. Maithel Easy to make in the microwave. Makes a great side dish. I chop up vegetables in the mini food processor and add them to the rice for my 2 year old.

Health benefits for our family include muscle-building since rice + beans = complete protein. We usually serve a side of jalapeno chimichanga with the rice.

By D. Hartsock Closest "red" Mexican rice since a dinner in Mexico. I add two heaping tbsps. of crumbled bacon and a can of RO-TEL Original diced tomatoes and green chilies. Everyone from college students to a 90 year old love it.
