5Our Gluten Free Bread of ChoiceSep 03, 2007

We've been gluten free and yeast free for a few years now. In the beginning we couldn't find a bread that resembled "real" bread. Then we tried this mix. The first week we had it we went into bread overload - made french toast, toast and eggs, sandwiches, everything we'd been wanting for the last few years. It was wonderful. I fill mini baking dishes, sprinkle it with sesame seed and use it to make hamburger buns. We prefer it hot from the oven or toasted for sandwiches, Very simple, too, just add water (that's it) beat for 3 minutes in mixer and you have 2 loaves of bread 40 minutes later. Just spent the day driving around to our local health food stores for it but they were all out. Amazon's cheaper anyway and has free shipping on this item.

I make this bread with a mixer and 9-1/4" x 5-1/4" x 2-3/4" loaf pan.
I usually only make 1/2 the bag- one loaf about every three days. I have learned that you can have complete control over how it turns out. This bread has the texture of a pound cake. All you have to do is add water to the mix. If you add the mix directly to the water, stir only slightly and place in the loaf pan, you will get a very short loaf (about half the height of the pan). It has all the nutrients of the full loaf, but more likely to be eaten by young children. A small sandwich fits in a Zip-Lock snack bag. However, if you mix the water for a while to add air to the water before adding the mix, it will rize above the loaf pan, making full-size sandwhich bread like you would buy at the store. It has more protein and fiber than most bread you can buy and with the "Subscribe and Save" program, spend less per loaf than you would for whole wheat bread at the grocery store. If sliced thin, you can easily get 20 slices.

Having been gluten free for 4 months, we have tried many gluten free brands on the market. For those out there who like a Wonder Bread type of bread, this is your answer. Others on the market crumble and just won't hold up in the children's lunches, this one will. The taste is mild and there are little air pockets just like "real" bread. Very easy to make: just add liquid to mix and bake. The manufacturer does not recommend a bread machine, but I have put 1/2 the bag into my Zoji, 5 minute preheat, 5 minute knead, rise 1 and 2 off rise 3 for 60 minutes bake for 60 and the load turned out great. If you use the whole mix with yeast, be warned you will have to scoop out the mix and make a pizza or buns or something:)But the finished product was beautiful.

Very, very good mix. For those looking for a lighter bread than Gluten Free Pantry, Anna's, or Pamela's

(2 yrs later. and we've found better or just buy Udi's)

I purchased this bread (a six-pack!) based on the reviews. I made one batch of rolls that were okay. Also made three loaves of bread. For two loaves, I followed the recipe on the bag and ended up with two bricks - not as bad as the store-bought stuff, but still bad. For the third loaf, I tried the yeast bread recipe on their web site and made it in my bread machine. That loaf turned out much higher, but was very close to the bricks you can buy pre-made in the store. I'm now stuck with 4 1/2 more bags of the mix. Hopefully, I can find some recipe (pizza crust? buns?) that I can use the rest up in. The Bob's Red Mill Wonderful Bread Mix is much, much, much better - no comparison.

I use this for hamburger buns (make with English muffin rings on a cookie sheet) and use their yeast recipe from the company website made with milk. Sprinkle a few sesame seeds on top before baking, and no one would ever know the difference. Make them fairly thin for the best results. I imagine it would make a great easy pizza crust, too.
