I'm a big fan of Hamburger Helper - the taste is good and the cooking is easy and relatively trouble free. Their Bacon Cheeseburger Mac is one of my favorites - creamy macaroni and cheese with a crunchy bacon topping.
The box calls for 1 pound of ground beef, but I can't help but feel that is way too much. I use 1/3 a pound of ground beef, seasoned with coarsely ground pepper, and that is more than enough for me. Vegetarians can omit the meat entirely and still enjoy the pasta; and I should also point out that ground turkey can be substituted for lower fat. This particular Hamburger Helper version calls for a large amount of milk - you will need at least 2 cups on hand before you start cooking. While this is one of the "simmer, cover, wander off" classics, you do need to actually pay attention to this one and stir frequently - for some reason the pasta in this version has a tendency to want to stick to the bottom of the pot a little. However, even if it does stick, just gently scrape it off with a wooden spoon at the end of the cooking and stir well - the taste is not adversely affected. One odd thing, though - I remember there being more crunchy bacon bits in this. Am I remembering wrong, or has the topping gotten scanty? I'm not sure, but I suppose it doesn't matter.
This serves a bunch of people - at least a family of four, I'd say. When I cook this for myself, there's an awful lot of leftovers and, like many easy-to-prepare foods, I don't care very much for the reheated product, which means that after the second night of leftovers, the rest goes into the compost bin. I hate being wasteful, but it's either this or cooking exact portions from scratch every night.
