I have not tried the flour yet - and will add to this review when I do.

However, I was very impressed with the packaging. The flour comes in the typical paper packaging that most flour comes in (but this was especially interesting because it was all in Italian. Pretty nice and obviously authentic Italian flour). But surrounding each bag of flour was bubble wrap individually fitted around each one. Not that flour needs to be protected that much, but I thought the extra effort involved in this packaging was very impressive.

Have used this flour several times now, in making pizza. It's probably just as good as the Antimo Caputo 00 flour, which costs quite a bit more on Amazon. It's ground just as fine, which is what the 00 distinction means. It's a higher protein flour than our pastry flour, so using either pastry flour (too little gluten) or all purpose flour (not ground fine enough) doesn't work nearly as well as this flour in making authentic Italian pizzas.

Opened the flour and it smelled bad, musty and old. Checked the packaging and it was a month past the 'best used by' date (Italian packaging, so 011111 is Nov 11th 2011), before the order date. Not what we normally expect from Amazon, however, they did refund the purchase so can't complain about customer service at all, just the product.

I ordered it knowing that some had complained that the flour was near or past its expiration date.

The product that I received is good for another 7 months- it won't last that long in our pantry.

This flour makes excellent pizza, focaccia or baguette @60% hydration give or take a little.

I'm pleased and will buy more once I run out.

I almost have to wonder if the expiration date is in the international year/month/day format rather than month/day/year. Being nearly two years past date would explain the horrible seaweedy, moldy smell that appeared when I opened the individual paper packaging. My order was in late October in the upper Midwest, so I don't think it spent any time sitting in a hot delivery vehicle.

I was hoping to use this for pizza. I'm trying to replicate a thin, crisp, chewy crust and understand that a '00' is probably the best route. Given the price difference, hassle, and now disappointment, I'll continue to use a good bread flour like King Arthur or Great River with an added tbsp of vital gluten per 2 c. flour.

I did make dough with this flour, which seemed to rise all right, but didn't have the same 'oven snap' when used in my normal bread and pizza dough recipes. The crumb ended up being very dense and heavy.

Packaging differs from that shown.Paper sacks in shrinkwrap limit the durability in shipping and storing. The flour it self was just ok.
