Best gluten-free bread for FRENCH TOASTFeb 22, 2007
By D. Hamilton I've been on the gluten free diet for 4 years. Tasted tons of breads and thrown away many of them. This bread is light and fluffy - perfect for french toast. It is the first and only bread I have found that makes great french toast. Leave the bread in the egg longer than you would traditional gluten containing bread - I soak it for a couple minutes. It is amazing! The bread itself is very bland. I can understand how someone new to the diet, trying to find a good bread for sandwiches would be very disappointed. But, the texture is ideal for french toast or garlic bread.

By J. Smith I just love this bread! As a non-Celiac living in a home with two Celiacs, it was really hard for me to adjust to the textures of the bread products available. We all agree that this is the best bread out there and the Amazon price is fabulous :)

By Sandra James This tapioca loaf is a great alternative to traditional (non-gluten-free bread); tastes very good and, unlike some others that I've tried, this one can be spread with evrything I've tried so far (peanut, melted cheese, etc.). I would recommend that you try this product, I'll certainly use it again.

It is moist and dough-y when you steam it! We activate the elasticity by steaming in the microwave for 10-15 seconds, just like a tortilla. To steam; fold 2 slices in a paper towel and cover with a microwave lid. My son has been GF for 6 months after Celiac Disease diagnosis and we have tried many heavy, crumbly breads and this one is the only one that passes his test. I pack him a pb&j for school lunch everyday. Also, this "light" one is great beacause it is half the carbs...he also has Type 1 Diabetes.

By a work in progress I think this is my third or fourth case of Ener-G bread from Amazon but something new happened today.
When it arrives I usually put the loaves in the freezer w/in 24 hrs. I just now pulled a bag out of the freezer, removed the white tab and dumped the loaf on the table. The tapioca bread is wrapped with an air tight inner wrapper and an outer plastic bag. Not only did the loaf slide out of the bag but so did some kind of insect larvae. As I went back the freezer to check the other bags I noticed the outer bags had little holes punched in them on purpose. I suppose so the outer bags won't pop or will box up more easily. I'm guessing this is how the little guy got in but still.. kind of gross. I'm not so "bugged" that I won't eat the bread since it was still protected by the inner wrapper but I thought I would mention it.
