4100 calories makes this a soup bargain, but cook more than instructionsAug 30, 2009

This soup has a nice herbally broth and is a great filler for dieters as it has almost no fat and ony 100 calories (squeaks into 1 WW point). It has 3 grams of fiber, which means it'll carry you longer than broth and noodle soups usually do.

However, this needs almost twice as much the cooking time as recommended. The beans and pasta stay hard if only directions are followed. I find that using boiling water from the start, and renuking at the 5 or 7 minute mark and letting it sit again works best to soften the ingredients and thicken the broth.

For non-Vegans, this benefits from a sprinkling of parmsan. For more protein, one could add soy crumbles to stay vegan. I occasionally add both parmesan and some milk to make it like a cream of tomatoey base.

The pasta is not as good as regular pasta (never really gets to the right texture). I noticed this with Dr. McD's ramen soup, too. Don't know if it's because it's vegan or not, but there ya go.

Still, when you are dieting or just want something without a host of preservatives and chemicals, this is a nice soup to have handy.

I love this soup. It is light but filling. It has a wonderful aroma. Everyone in my office has tried mine and can't believe it is low fat and powered. If you like Italian or pasta salads you should enjoy this soup.

I've enjoyed almost all McDougall's product but this new line of "light sodium" is a bit of a scam. Mainly they just decreased the serving size to meet the criteria.

I am not vegan, but have been looking for some easy, healthier lunches. This soup tastes pretty good! And it is low calorie and low sodium. Only complaint is that if you microwave it per the instructions, it will spill out everywhere. I cook mine for about 1 min - 1:15 on High, then 2:30 on 20%, and cover and let sit for about 5 mins... comes out great. The pasta cooks as it sets for 5 mins and it cools downenough to eat it without scalding your tongue.

I'm eating a cup of this soup as I type this. It's handy to have in the office, it keeps me from running out to buy something deep-fried or cream-filled, and it really isn't bad. But it's not my favorite Dr. McDougall's soup. It has a slightly bitter edge that I don't care for, the kind you sometimes get from dried herbs that have been sitting too long (the use-by date is a year from now), and at the same time it seems too sweet. The first thing my wife said about it when she tried hers a few minutes ago was, "too sweet," so it's not just me (and she likes food sweeter than I do). We won't throw the rest of the box away, but I won't be ordering this one again. If I'm going to give up a trip to my favorite bakery to eat soup in my office, I want it to be better than not bad.
