great quality. though soy oil would be strange but it turn out no problem. will buy again. like the small pieces. fit nicely on crackers, pizza ect.

Ya! Anchovy like most other food product are best when fresh. When Canned anchovy fillets are fresh they are long smooth and of good solid flexible flesh. As they age in the can they begin to deteriorate and fall apart leaving small dark rough looking pieces of anchovy that I found in the cans I bought. These smaller pieces lose flavor and are much harder to work with as well as casing more oil from the can to be used than might ordinarily be wished for. The price was good. Very good in fact, for fresh. However when I open a can and find what I described above I look for notice "May be somewhat smaller and darker due to warehouse age" or something to alert me that I may not have use for these. I hate surprises like this and I bet the folks supplying these anchovy hate surprises too.
