Excellent risotto riceMay 02, 2008
By Jennifer Chamberlin This is an excellent vialone nano rice - which is my favorite for making risotto - vialone nana allows for a softer creamer rice (ie slightly more cooking) without degrading and losing its form and texture as some other "risotto rices" can do if cooked beyone al dente. Excellent quality and reasonable price.

By S. Citron Okay I know it's just rice. Still, if you like your risotto smooth and creamy, Vialone Nano is the way to go. Better than Arborio, which ain't bad either. Campanini does a nice job of vacuum-packing their rice, so these little boxes should last a long time in your pantry. Yum.

By CK I got a box of this rice free for buying another product as it came as a bonus buy. This rice is the best for risotto! So much so that I bought a case of it! I can't recommend this Campanini rice enough! Buy a box and enjoy!

By Bill Cornell I just came back to Amazon to order more of Campanini's vialone nano, only to find that it's currently not available. This company produces excellent rice at a very affordable price. In the past, I had always made risottos from carnaroli or aborio, but I liked their vialone nano so much that I was going to get another 4-pack. Risotto should be served al dente so that the slightly firm texture of the rice is still there. It makes a significant difference in enjoying risotto. I made one tonight with asparagus tips and shiitakes using their rice and it was excellent.
