The Baltic Sprat is a small, herring-like fish, found mainly in the Baltic Sea. While other countries along the Baltic coast also catch and smoke the fish, it is Latvian sprats that have become a synonym for delicacy and sophistication. It's the gourmet's choice. Baltic sprats are made using special old recipes, and are considered a delicacy. Only sprats caught in autumn and spring are used to manufacture the particular product, as during these seasons the quality of the fish is the highest. Sprats pate served with rye bread makes a great appetizer.
