You can replace white flour in all your baking with this flour, and get more whole grains into your diet. This flour does not make your baked goods heavy, and the flavor is very mild.

We like trying new flours for our home made bread (mostly sourdough). Spelt works very well with sourdough starter. Gives the bread a subtle nut like flavor and fine texture. Plus, it doesn't affect the rise very much (we do add gluten to assist the sourdough rise). Of amaranth, teff, and spelt, we like spelt the best.

By Jill Groebner The whole grain spelt is so much heavier - it creates a much denser/smaller load - this light unbleached flour makes a far suppeior loaf of bread.

Our family switched from wheat flour to spelt hoping to improve our nutrition and avoid the sensitivities that we knew was caused by wheat. It is wonderful for baking, from cookies to bread. It is more tender than whole wheat flour and produces a very fine bread.
