Great product -- use it to make wheat-free flour substitute!Sep 14, 2006

I can't eat any kind of wheat flour, but since I discovered Almond Meal (Bob's Red Mill), my diet is much easier to live with. I use 4 parts almond meal with 4 parts garbanzo (bean) flour and 1 part potato starch (NOT potato flour)as a substitute for regular flour. I've made brownies, peanut butter cookies, banana bread, and carrot cookies and found the texture and taste are not noticeably different than the original recipe, at least to me.

While these arrived fresh, freshness isn't the only hallmark of a quality product. You can get the same results with a good food processor (i.e. a Kitchen Aid). This is NOT a fine, even grind. If I sift the product, I find a lot of chunks. I want a fine EVEN grind when using nut meal/flour (the terms are used interchangeably in the industry) as the main or only flour in my baked goods.
Since this brand is easy to find in many supermarkets, I do recommend it for some uses. It's good for folks who don't do mail order, those non-GF cooks looking to lower the carb count of their bread coatings, and those looking for an easy GF or a no-carb "breading" option, but only when a coarse coating is suitable. For instance I like fine coatings if I'm going to "pan fry" a white/light flesh fish fillet.
When used as the main or only flour for baking, the batter will look lumpy and the finished product will taste a bit gritty. It won't perform well in some recipes because the chunkier nature of the grind will affect the way the batter handles moisture, which could result in a dense rather than light texture. It could also yield products that fall severely upon cooling.
In order words, disappointing outcomes might not be the recipe or your culinary technique, it could be your choice in ingredients!

This is wonderful on chicken! I use this product to fry chicken in and it brings a whole new meaning to fried chicken! Just use the flour as you would any other and then pan fry. Delicious!

By Dagger Bob's Red Mill is a reliable and inexpensive source for gluten-free baking products. And yes, almond flour makes delicious, rich, nutty baked goods. But did you know you can also use it in place of bread crumbs? Bread chicken or fish with it, stuff mushrooms with it, there is no end to its versatility.

MARVELOUS as a facial cleanser and mask!Jan 06, 2011
By Penny Lane I know it may sound strange, but I use a tablespoon of this almond meal mixed with water as a facial cleanser and mask, and ever since the first use of this paste, the quality of my skin has HUGELY improved. I honestly wish I had pictures to share, because my acne has been reduced in half within a single month. I have tried literally hundreds of different skin care products and homemade remedies, and this is definitely a thoroughly effective mild exfoliant, cleanser, and mask for acneic skin.
