If you enjoy lemon poppyseed muffins (loaf), this is the mix for you. Plus, it is the easiest mix ever; takes just a minute to mix. Personally, I add about a tablespoon of pure lemon extract to the mix, just to kick-up the lemony flavor. My family and friends love when I make these muffins.

Not bad for a nice change in pace from boring morning breakfast. I do add various ingredients to the batter when I'm in an experimental mood: pure lemon extract for a more lemony flavor, sesame seeds, flaxseeds, dried cranberries, nuts...I just get creative with whatever is within reach at the time. With such a simple batter it is easy to throw in extras to keep it 'new'. I make so many different variations of this that I've subscribed to it. Try it; you'll like it, especially the quick, easy mixing and short baking time.(ps-even with non-stick baking/muffin pans, use muffin papers or non-stick spray for best results.)

i am disable and dont always have eggs on hand like so many other muffin mixes need so these are perfect for me. also i have put apple or actually you can use any canned pie filling in a pan and after mixing the lemon muffin mix with the water i poured it over the filling and baked until golden. it makes a great cobbler add ice cream and its a desert fit for company.

I absolutely love these lemon poppy seed muffin mixes. They hardly take any effort to make, and they are so delicious, I have to make 2 packages at a time. Each mix makes 6 muffins and I love eating them hot or cold from the fridge. They are a great grab-and-go breakfast or a wonderful bedtime snack. I highly recommend them.

These are great muffins, especially with added lemon juice and blueberries. And, so easy. No eggs or milk, just water. I use them in our bed and breakfast and the guests love them. I tell them that my friend Betty helped me!
