These cookies are great! My mother made a batch of these and they turn out firm and lightly chewy--just perfect. As I recall from the box you add molasses and butter, and they come with a cookie cutter. She bought them in a local store around Christmas time. We are both delighted to find them on Amazon and will be splitting a 6-box order. One box does make alot of cookies, but they freeze really well.

The amount of spice contained in the mix was perfect, absolutely perfect. NOTE: the mix requires butter or margarine, eggs and MOLASSES, which folks may not always keep on hand, so beware that you will need molasses to complete the recipe. My only complaint is that I had to add about 1/2 cup of dark brown sugar plus an additional 1/4 cup of molasses to the mixture to meet my taste requirements for a traditional gingerbread cookie. Many folks don't have as much of a sweet tooth as I do, so most probably won't need the extra brown sugar, maybe a little additional molasses will suffice. I recommend a taste test (before adding eggs!) to see if you're happy with the flavor/sweetness. I used liquid pasteurized egg whites instead of whole eggs with no problems. Just FYI, Barry Farms, an Amazon vendor, sells molasses powder which I often keep on hand for recipes, although I used bottled Grandma's Molasses for this batch of cookies. With the extra sugar/molasses, these cookies were 95% as good as the "from scratch" cookies I make during the holidays. Yes, the whole wheat taste does "come through" but it is not offensive, and I quickly grew used to it. In fact, the texture of the cookies was perfect (soft, but not too soft, raising nicely during baking and staying slightly soft rather than hardening into bricks like so many recipes do). The box of mix I baked (purchased at a local grocery store) was almost expired... yet it still tasted fresh and was not "flat" at all. It's worth the price and effort of using this cookie mix to avoid preservatives and MSG, which often give me migraines. I will be buying Arrowhead Mills gingerbread cookie mix again!

Cain I purchased 2x the 6 count quantity as I committed myself to baking 7 inch tall gingerbread persons for our youth LOGOS group at the church, and for my husband's staff at work etc. They turned out pretty well though a little softer than I would have like for the finished product, so they had a tendency to break if not handled carefully. However, the kids enjoyed decorating which was the week of Christmas activity and, for the guys at my husband's work, I left them un-iced which they like better. You could taste more of what I describe as "whole'wheat" perhaps texture as part of the ORGANIC feature I would guess. Overall good flavor and well received.
